摘要
选用木瓜蛋白酶对鸭血进行单酶水解研究。首先将未加抗凝剂的新鲜鸭血通过加热凝固灭菌,再加水打浆,形成流动性较好的鸭血溶液,然后再进行酶水解。在单因素分析的基础上,采用正交实验对鸭血的酶解条件进行了优化,得到最佳水解工艺为加酶量10000 U.g底物-1,pH 6.5,温度55℃,水解时间为1 h。
The hydrolysis of duck blood using papain was investigated.First,we made the duck blood without anticoagulant coagulated through the heating,then added water to beat to form good fluidity duck blood solution.The orthogonal test was used to optimize the reaction conditions for enzymatic hydrolysis of duck blood based on a single factor test as follows： the amount of enzyme was 10 000 U ·g substrate^-1,and the hydrolysis time was 1h at 55℃ and pH 6.5.
