摘要
黄酒活性干酵母实现了酒母商品化,是酒母培养工艺的重大创新,对促进黄酒工业现代化具有重要意义。论述了黄酒活性干酵母在机制麦曲黄酒、乌衣红曲酒和红曲酒、传统黄酒、酒母扩大培养、夏季籼米黄酒生产中的应用,以及AADY在米曲生产中的应用等。
Active dry yeast (ADY) for rice wine making achieved yeast commercialization, which was a vital innovation to yeast culture and was of great significance to enhance the modernization of rice wine industry. This paper stated the application of rice wine ADY in the production of machine-made wheat koji rice wine, Wuyi Monascus wine Monascus wine and traditional rice wine, the enlarged cultivation of yeast, the application of summer long-grain noglutinous rice wine in rice wine production and the application of ADY in the production of Aspergillus oryzae, respectively.
