摘要
选用壳聚糖、海藻酸盐等原料作为涂膜原料,并通过正交实验优化涂膜配方,对黄瓜进行涂膜处理。在室温下,分别对黄瓜进行了失水率、硬度、叶绿素含量和Vc含量的测定。
Cucumbers were soaked in the solution of chitosan and sodium alginate to form a coating on the surface of the cucumbers,and the optimum ingredients of coating material were obtained.The rate of waterloss,firmness,total chlorophyll and vitamin C were measured at room temperature.
