摘要
[目的]为黄瓜保鲜寻求一种较好的生物保鲜方法。[方法]研究不同浓度壳聚糖涂膜处理对黄瓜采后生理及保鲜效果的影响。[结果]在整个储藏期间,用不同浓度壳聚糖处理后的黄瓜,与对照相比,有机酸、叶绿素、可溶性糖及Vc含量都极显著增加,失重率极显著降低。其中,用1.0%壳聚糖溶液对黄瓜进行涂膜后的保鲜效果最好,储藏第4天与对照相比,黄瓜的有机酸、叶绿素、可溶性糖及Vc含量分别提高了48.7%、43.0%、23.9%、37.6%,第8天分别提高了76.9%、58.5%、75.0%、103.9%,第12天分别提高了111.8%、92.8%、290.3%、246.5%,而失重率在第4、8、、12天分别下降了63.8%、63.4%、63.2%。同时使黄瓜仍保持良好的感官情况。[结论]壳聚糖是黄瓜安全、有效的生物保鲜剂。
[Objective] The aim of the study was to seek a good biological preservation method of cucumber.[Method]The changes of postharvest physiology and sensory qualities were investigated to evaluate the preservation effect of chitosan on cucumber.[Result]During the period of storage,compared with the control,the organic acid contents,Vc contents,chlorophyll contents,soluble sugar contents were significantly increased and the weight losses significantly decreased.The differences between the different chitosan concentrations were highly significant.The treatment with 1% chitosan coating showed the best preservation effect than the other treatments.Organic acid contents,chlorophyll contents,soluble sugar contents and Vc contents increased respectively on the forth days by 48.7%,43.0%,23.9% and 37.6%,on the eighth days,by 76.9%,58.5%,75.0% and 103.9%,on the twelfth days,by 111.8%,92.8%,290.3% and 246.5%.The weight losses on the forth,eighth and twelfth days respectively decreased by 63.8%,63.4% and 63.2%.At the same time,good senses of cucumber could be maintained.[Conclusion]Chitosan was safe and effective biological preservation agent.
