摘要
为了提高杨桃的保鲜效果,以不同含量的壳聚糖和CaCl2复合,对杨桃进行涂膜处理,研究复合保鲜剂对杨桃的保鲜作用。结果表明,一定含量的壳聚糖和CaCl2处理可以提高杨桃的优果率,降低失重率,提高维生素C和总糖含量。其中,采用1.5%壳聚糖+1.0%CaCl2复合保鲜剂处理,贮藏11d时,杨桃失重率比空白组降低0.12个百分点,维生素C含量比空白组高7%,可滴定酸和总糖含量分别为0.31%、6.5%。1.5%壳聚糖+1.0%CaCl2是杨桃保鲜的最佳处理组合。
The effect of treating with various contents of the mixture of chitosan and CaCl2 on carambola fresh-keeping was studied in order to promote the efficieny of fresh-keeping.The results showed that appropriate contents of the mixture could improve unchanged-fruit-rate,decrease weight-lose-ratio,and raise the contents of vitamin C and soluble sugar.The weight loss of carambolas decreased by 0.12 percentage points,and the content of vitamin C increased by 7% with the treatment of 1.5% chitosan and 1.0% CaCl2.The contents of titratable acid and the total sugar were 0.31% and 6.5%,respectively.1.5% chitosan and 1.0% CaCl2 was the best treatment.
