摘要 益生菌抗热保护剂的研究一直是工业化大规模生产益生菌产品的热点与难点。本文选取海藻糖、明胶和甘油作为抗热保护剂,研究其对嗜酸乳杆菌和双歧杆菌混合菌体的抗热保护效果。结果表明,海藻糖、明胶和甘油均能够提高菌体的抗热存活率,可以作为抗热保护剂。3种保护剂之间存在交互作用,复合使用时的抗热保护效果比单独使用时好,其最佳复合配方为海藻糖16%、甘油6%、明胶0.14%,菌体存活率可达16.58%,活菌数为1.66×108 cfu/mL。 The study about the thermal resistant protective agents of probiotics was the hot and difficult subject in the manufacturering of the probitic products on large industrial scale.Trehalose,gelatin and glycerin were used as thermal resistant protective agents to evaluate their thermal resistant protective effects on probiotics mixture of Lactobacillus acidophilus and Bifidobacterium.The results indicated that trehalose,gelatin and glycerin,which were able to improve the thermal resistant survival rate of probiotics,can be used as thermal resistant protective agents.The protective effects of composite agents were better than the single one due to the interactive effects of the three agents.The optimal composition of protective agents were trehalose 16 %,glycerin 6 % and gelatin 0.14 %,then the rate of the survival probiotics reached 16.58 %,the viable cell numbers was 1.66×108 cfu/mL.
