摘要
利用保护剂对乳酸菌的保护作用,通过梯度实验和正交试验选出保护剂的最佳添加量和最佳复配组合。使奶粉中的乳酸菌具有较高的活菌存活率。试验表明保护剂最佳复配组合为:20g/L脱脂奶粉,5g/L葡萄糖,5mL/L甘油。从而生产出来的乳酸菌奶粉经冲调后,其活菌率达到86.80%,酸度为102°T。
Making use of the protective tunctlon ot some regent on Lactooacillus, optimum dosage and formulation of protection reagent were chosen by means of mono-factor tests and orthogonal tests, and the result was applied in yoghurt processing technology to get the better survival rate of Lactobacillus. The optimum formulation of protection reagents chosen by the research were that skimmed milk powder 22 g/L, glycerol 5 ml/L,glucose 5 g/L. After the Lactobacillus milk powder produced with protection reagent was soluted,its Lactobacillus survival rate was 86.80%, acidity was 102°T.
