益生菌对人体具有保健功效,在乳制品中的应用日趋广泛,但制品中益生菌的存活率很低。微胶囊包埋是保护益生菌免受外界环境侵害的常用方法,综述了益生菌的微胶囊包埋技术及在生产中的应用。
