摘要
用5%K—卡拉胶包埋乳酸菌,经0.5%戊二醛和0.2M已二胺溶液加固处理,得到了一种较为满意的固定化乳酸菌。扫描电镜观察表明卡拉胶有效地包埋了大量乳酸菌,但固定化乳酸菌的产酸能力与游离乳酸菌的产酸能力无显著差异,同时温度、柠檬酸钠等因素对固定化乳酸菌产酸能力的影响小于对游离乳酸菌的影响。
The immobilization of L.helvetius entrapped with 5% K-carrageenan and solided with 0.2M hexamethyldiamine and 0.2% glutaraldehyde was reported. The observation of scanning electron microscopy clearly indicated that numerous L.helvetius were entrapped within K-carrageenan. The results aslo show that lactic acid-producing level of immobilized L. helvetins and native L.helvetius has no obvious difference.but the effect of temperature and citrate sodium on lactic acid yield of immobilized L.helvetius is less thanthat of native L.helvetius.
