摘要
研究了曲种培养时间、培养温度及培养基成分对腐乳毛霉菌丝生长及产蛋白酶的影响.结果表明,在25°C左右恒温培养36~48h,菌丝生长良好,孢子产生少,蛋白酶产量尤其是酸性蛋白酶产量较高;麦麸豆粉培养基比单纯麦麸培养基利于毛霉菌丝生长及产酶.合理选择培养时间、培养温度及培养基成分,对腐乳毛霉的生长及蛋白酶的适度产生有较好的效果.
Suitable culture time and temperature have been studied for the growth and proteinase producing by beancurd mucor.The results show that the optimal culture time is between 36~48 h at 25 °C.The mucor grow faster,producing less spore and has a considerablely high enzyme vitality.This may be an effective way to reduce the production of white spots.
