摘要
在单因素试验基础上,利用响应面法优化腐乳生产的培菌条件。响应面分析结果表明,最佳培菌条件是:温度28℃,时间72.7 h,接种量10.2%。
Based on single factor experiment, Response Surface Method was used to optimize the cultivation condition conditions in sufu production. According to the results of Response Surface analysis, the optimum conditions of cultivation were temperature 28℃, time 72.7 h, and inoculum amount 10.2%.
