摘要
自热食品具有方便、省力、快捷的特点,符合快消费时代的发展需要,自热技术是推动自热食品发展的关键,文章概述了自热技术的发展现状和原理、自热技术传热的规律、自热食品的原料预处理和包装保鲜,讨论了自热食品存在的安全问题及未来的发展趋势。
Self-heating food is convenient,labor-saving and fast,which meets the development needs of the rapid consumption era.Self-heating technology is the key to promote the development of self-heating food.In this paper,the development status and principle of self-heating technology,the law of heat transfer of self-heating technology,the raw material pretreatment,packaging and preservation of self-heating food are summarized,and the safety problems and future development trend of self-heating food are discussed.
