摘要
为得到生产休闲藕片的最佳护色工艺流程。对亚硫酸氢钠、亚硫酸钠、抗坏血酸和柠檬酸等4种护色剂不同剂量的护色效果和对不同护色剂以不同剂量进行组合进行护色效果的比较研究。组合后的效果明显好于使用单一的护色剂,其作用效果为:NaHSO3+VC+CA>NaHSO3+VC>NaHSO3+CA>NaHSO3>VC+CA>VC>CA。综合考虑各类护色剂的护色效果和经济性,选用亚硫酸氢钠500 mg/L和柠檬酸1 000 mg/L组合,处理藕片最合理。
Get the best production of casual lotus root color protection process. The study of the experimental sodium bisulfite, sodium sulfite,ascorbic acid and citric four kinds of color protection color fixative effect of different doses and for different color fixative at different dose combinations of color protection were done. The combined effect is much better than using a single color fixative.Its effects in the following order was NariSO3+Vc+CA〉NaHSO3+Vc〉 NaHSO3+CA〉NaHSO3〉Vc+CA〉Vc〉CA. Considering the various types of color fixative color maintenance and economy, the most reasonable treatment is the combinations of Sodium bisulfite 500 mg/ L, and citric 1 000 mg/L.
