摘要
以功能红曲为试验材料,采用正交试验设计优化发酵洛伐他汀(MK)的条件:高温温度及持续时间,低温温度及持续时间,装瓶体积,装料量。结果表明,高温35℃持续5d,低温22℃持续15d,装料量360g/L为发酵MK的优化条件。同时,通过细胞培养实验发现,功能红曲与MK通过缓解内质网应激具有降脂作用。
Red koji rice (Monascus tuber) was fermented to produce lovastatin (Monacolin K, MK). Orthogonal experiment design was employed to determine the optimum high temperature and lasting time, low temperature and lasting time, bottle filling volume and rice charging amount. The opti- mum solid fermentation conditions were: high temperature 35℃ for 5d, low temperature 22~C for 15d, 1L delta bottle with rice charging amount of 360g. Meanwhile, MK and functional Monascus rice display lipid-lowering function through alleviating endoplasmic reticulum stress.
