摘要
玉米蛋白粉经氯仿常温浸泡 2 .5h ,75℃抽提 1 .5h ;pH6.0 ,温度 40℃ ,4% β -CD溶液浸泡 4h脱臭 ;pH5.5,温度 55℃ ,2 0 %磷酸三钠浸泡改性处理后 ,制得玉米蛋白精粉。此精粉在灌肠中的添加量小于 4%时 ,产品质量良好。
Corn powder was decolorized on the condition of temperature 15 ℃, soking time 2.5 h, extracting 1.5 h(temperature 75 ℃), deodorized on the condition of pH6.0, temperature 40 ℃, soking time 4 h,concentration of β-CD 4% and modified in Na 3PO 4 (concentration 20%).All this can make the refined corn protein powder.The refined corn protein powder can be added into the meat sausage, When additive content is below 4%,the quality of the sausage is fine.
