The physical characteristics, structure and functions of oat β-glucan are introduced, such as water holding capacity, the adsorption effect on chelating cholesterol and bile acid molecules, function to improve the intestinal flora environment and so on. The applications of oat β-glucan in food are expatiated and its development is prospected.
