摘要
研究表明:燕麦的营养价值和保健功效主要归功于籽粒中的可溶性膳食纤维——β-葡聚糖。本文详细阐述了燕麦β-葡聚糖的特性、功能、影响因素以及在食品工业中的应用,并对燕麦β-葡聚糖的发展现状和应用前景进行分析。
Oar's nutrition value and heahh effection mainly due to soluble dietary fiber in grain--β-gluean. Characteristies, fimction, influence factors and its application in food industry of oat β-glucan were introduced briefly, and development present situation and application prospect on oat β-glucan were analyzed.
