摘要
采用测定油脂中过氧化值(pov),研究了自制的茶多酚乳剂对数种油脂的抗氧化效果,并与茶多酚粉剂及合成的食品抗氧化剂丁基羟基茴香醚(BHA)和二丁基羟基甲苯(BHT)的抗氧化效果作比较.实验表明:茶多酚乳剂的抗氧化效果优于茶多酚粉剂和BHA+BHT。
Testing pov% in oils, tos tudy the antioxidation activites of self-prepared tea polyphenol emulgent was made. These were compared with those of tea polyphenol powder and BHA+BHT. The experimental resullt showed that the antioxidative activites of tea polyphenol emulgent are superior to those of tea polyphenol powder and BHA+BHT. The Antioxidative activites of tea polyphenol emulgent of peanut oil and rapeseed oil are 4 times and 3 times better than BHA+BHT respectively.
