摘要
采用测定油脂中过氧化值（ｐｏｖ），研究了自制的茶多酚乳剂对数种油脂的抗氧化效果，并与茶多酚粉剂及合成的食品抗氧化剂丁基羟基茴香醚（ＢＨＡ）和二丁基羟基甲苯（ＢＨＴ）的抗氧化效果作比较．实验表明：茶多酚乳剂的抗氧化效果优于茶多酚粉剂和ＢＨＡ＋ＢＨＴ。
Testing pov% in oils, tos tudy the antioxidation activites of self-prepared tea polyphenol emulgent was made. These were compared with those of tea polyphenol powder and BHA+BHT. The experimental resullt showed that the antioxidative activites of tea polyphenol emulgent are superior to those of tea polyphenol powder and BHA+BHT. The Antioxidative activites of tea polyphenol emulgent of peanut oil and rapeseed oil are 4 times and 3 times better than BHA+BHT respectively.
