对速冻藕夹的加工工艺进行了探讨,制成的藕夹在微波炉中加热后仍能保持酥脆。
The process technology of fast frozen lotus root stuffed with meat was developed. The heating with boiling oil and freezing were the major points to be considered for the final product quality.
