摘要
采用一系列真菌和细菌,试验了咖啡因的抑菌作用。结果表明,咖啡因对食品常见污染菌有明显的抑菌作用,且具有热稳定性强、抑菌浓度低及抑菌pH范围广的特点。
The action of caffeine with a series of bacterium and fungi was studied. The results showed that the caffeine can effectively inhibit the growth of food pollutant bacteria. Caffeine is stable with heat, low inhibiting concentration and wide pH range on antimicrobe.
