摘要
对从咖啡渣中提取咖啡油的方法及咖啡油的稳定性做了研究,结果表明,咖啡油的热稳定性好、贮存稳定性好、抗氧化稳定性较好,但耐光性较弱。
Extraction and stability of coffee oil from spent coffee grounds were investigated.The results showed that coffee oilwas stable to heating, storing oxidation. However, it was sensitive to light.
