摘要 应用苏制UDAA114型破碎机研究了对桃带肉果汁的均质效果,结果表明,此机对桃带肉果汁具有良好的均质作用。桃带肉果汁在对果浆进行二次均质时均质效果最好,其次为对果汁均质和一次均质果浆。50%果浆含量的带肉汁用上述三种方法处理后,产品中<3μ的粒子所占百分比分别为87.62%、83.31%和83.2%,对照(不均质)为73.64%。处理样品静置30天后无沉淀分层。其离心机强化分层率分别为56%、60%和65%,对照为70%。含40%果浆的带肉果汁也有同样的趋向。 Effect of homogenization to peach nectars with UDA A114 disintergrator (made in USSR) was investigated. It was shown that this disintergrator is effective for homogenization of peach nectar. After treating with this machine, nectars were more stable, without any separation of serum or solids after storage 1 month at room temperature. The best homogenization effect was got from twice homogenization of peach pulp, then once for nectar and once for pulp. After treating with these three conditions, the 50% pulp nectars contained<3μ particules were 87.62%, 83.31%, and 83.20% respectively and the control was 73.64%. Serum fractions after centrifuging were 56%, 60% and 65% respectively, the control was 70%.The same order was shown in 40% pulp nectars.
