摘要
超氧化物歧化酶是生物体内抗氧化酶系中主要成员之一 ,具有重要的生理功能 ,在医药、食品、化妆品中有广泛的应用前景。本文从分类、分布、结构、性质、生理功能、代谢、制备等方面概述了超氧化物歧化酶的基础研究进展和在食品领域的应用研究成果 。
Superoxide dismutase (SOD) is one of the main antioxidants in organism, which is widely used in medicine, food and cosmetic with its important physiologic function. This paper gives a brief account of the progress of basic research on SOD and its application to food field from such aspects as classification, distribution, structure, property, physiologic function, metabolism and preparation. Besides, it briefly discusses the existing problems in SOD's application to food and its developing prospects.
