摘要
以脱脂大豆渣为原料 ,用磷酸盐缓冲液提取可溶性大豆膳食纤维。实验结果表明 ,较好的提取条件为 :浓度 2 %、料溶比 1∶6 0、时间 2 5h、pH6 6 ,并且产品得率高、色泽好。
The effects on the extraction of soluble dietary fib er from soybean okara were examined.The results suggest that soluble dietary fiber were almost completely extracted with 60 times of their volume of 2% phosphate buffer at 100℃ for 2 5 h,avoiding protein contamination.
