摘要
本文研究了花生奶生产过程中提高花生仁利用率的磨浆工艺条件,以蛋白质提取率和总固形物回收率为考察指标,得出最佳的工艺条件,为花生奶的开发与研究提供了一定的参考。
A milling condition was studied in order to increase the utilization of groundnut kernels during peanut milk processing. With protein extraction rate and recovery of total solids as indexes, optimum processing condition was obtained, this was a good reference to the development and reseaech of peanut milk.
