贡眉与牡丹白茶的代谢组学分析和抗氧化活性研究

摘要 为了解白茶化学成分与生物活性的关系,采用非靶向和靶向代谢组学技术系统分析了贡眉(GM)和牡丹(MD)2种白茶样品的挥发性及非挥发性化学成分,并评价了它们的体外抗氧化活性。结果表明:GM的总多酚和多数氨基酸含量高于MD;非靶向代谢组学共鉴定出1 963种代谢物,其中119种在GM和MD间存在显著差异,主要富集于黄酮类(38种)、酚酸及其衍生物(22种)和萜类(11种)等;靶向黄酮类分析进一步验证了2种茶在关键黄酮成分上的差异;体外抗氧化试验(DPPH,ABTS,FRAP)显示,GM和MD均表现出较强的抗氧化能力,且GM活性更优;相关性分析揭示特定黄酮类物质与抗氧化活性密切相关。 This study aims to reveal the relationship between chemical constituents and bioactivities of white tea.Both untargeted and targeted metabolomics approaches were employed to systematically analyze the volatile and non-volatile chemical constituents of two types of white tea:Gongmei(GM)and Mudan(MD).Furthermore,the in vitro antioxidant activities of GM and MD were evaluated.The results showed that GM contained higher levels of total polyphenols and most amino acids than MD.A total of 1963 metabolites were identified through untargeted metabolomics,among which 119 showed significant differences between GM and MD.These differential metabolites were mainly flavonoids(38),phenolic acids and their derivatives(22),and terpenoids(11).Targeted flavonoid analysis further validated the differences in key flavonoids between GM and MD.The in vitro antioxidant assays(DPPH,ABTS,and FRAP)demonstrated strong antioxidant acitivities of both GM and MD,with GM exhibiting stronger antioxidant activity.The correlation analysis revealed that specific flavonoids were closely associated with antioxidant activity.
