大豆蛋白/多糖双网络纤维制备及表征

摘要 以海藻酸钠(SA)、卡拉胶(CG)、大豆分离蛋白(SPI)为原料,Ca^(2+)为交联剂,采用湿法纺丝方法制备了双网络交联的SPI/SA/CG(SAG)纤维。采用傅里叶红外光谱仪、扫描电镜、热失重分析仪、电子万能试验机和紫外分光光度计对具有不同卡拉胶含量的SAG纤维的结构、形貌、热性能、力学性能和缓释性能等进行了表征。结果表明,卡拉胶的含量影响复合溶液的流变行为,引入适量的卡拉胶可以极大改善复合纤维的热稳定性和力学性能,其中抗拉伸强度高达204.785 MPa。卡拉胶的引入还有效降低了复合纤维在酸性环境下的蛋白质释放率,并延长了在中性条件下的持续释放时间。该复合纤维在模拟生理环境中具有良好的缓释效果。 Dual-network cross-linked SAG fibers were prepared by wet spinning method with sodium alginate(SA),carrageenan(CG),and soybean protein isolate(SPI)as raw materials and Ca 2+as cross-linking agent.The structure,morphology,thermal and mechanical properties,controlled-release performance of SAG fibers with varying CG contents were characterized by Fourier-transform infrared spectroscopy,scanning electron microscopy,thermogravimetric analysis,an electronic universal testing machine,and UV spectrophotometer.The results indicated that the CG content influenced the rheological behavior of the composite solution.The thermal stability and mechanical properties of the composite fibers were significantly enhanced by introduction of CG with suitable amount,whose tensile strength was up to 204.785 MPa.The protein release rate of the composite fibers was also effectively reduced by the incorporation of CG under acidic conditions and the sustained-release time in neutral environments was extended,confirming that the composite fibers exhibited excellent controlled-release behavior in simulated physiological conditions.
