摘要
西藏特色食品糌粑中的营养物质较为丰富,但糌粑中具有独特的功能性成分有β-葡聚糖、总黄酮、总多酚等,对这些功能性成分的检测,发现糌粑中β-葡聚糖含量均在0.03%~5.98%之间、总黄酮含量均在2.90~6.08 mg/g之间、总多酚含量均在0.583~1.50 mg/g之间。糌粑这些独特的功能性成分具有调节血糖血脂、增加免疫力、抗衰老等调节功能,以及预防心血管疾病和糖尿病等辅助功能效果。试验可为糌粑产品的品质、掺杂、监测、研发等分析提供参考方法。
Tibetan characteristic food zanba was rich in nutrients.However,there are unique functional components in zanba,such asβ-glucan,total flavonoids,total polyphenols,etc.The detection of these functional components found that the content ofβ-glucan in Zanba was between 0.03%and 5.98%,the content of total flavonoids was between 2.90 and 6.08 mg/g,and the content of total polyphenols between 0.583 and 1.50 mg/g.These unique functional ingredients of Zanba had the regulating functions of regulating blood sugar and lipid,increasing immunity,anti-aging,and preventing cardiovascular diseases and diabetes.The effective reference methods for analysis of quality,doping,monitoring,research and development of Zanba products could be provided.
