摘要
谷物萌发过程中,苯丙烷代谢途径酶被激活,使得谷物多酚类物质富集,游离多酚含量增多,从而提高了谷物抗氧化效果。本文综述了萌发谷物中多酚类物质与苯丙氨酸解氨酶的研究进展,并简要介绍了国内外对萌发谷物中多酚类物质的形成机理、谷物萌发与PAL活性的关系、谷物萌发与多酚类物质形成的关系等方面的基本研究状况及其发展前景。
The grains would produce more phenolic compounds and free phenolic compounds having more effective antioxidant activity induced by pre-germination,and the antioxidant activity of pre-germinated grains was higher compared to native grains.The research progress on phenolic compounds and phenylalanine ammonialyase in pre-germinated grains was summarized. The formation mechanism of phenolic compounds in pre-germinated grains,relationship between pre-germination and the activity of PAL,relationship between pre-germination and formation of phenolic compounds were introduced.The long-termpotential development was prospected.
