摘要
研究了小麦淀粉、小麦A淀粉、小麦B淀粉及其淀粉磷酸单酯的性能,并探索了其在蛋糕中的应用。
The characteristics of the monostarch phosphate prepared using different starch is studied in this paper. The application of those modified starch in cake was studied also.
