摘要
保鲜技术在水产品贮藏、运输和销售过程中具有非常重要的作用,保鲜不仅要保持其鲜度,还要保存其营养价值,研究安全、高效的保鲜技术具有非常重要的意义。主要从物理、生物和化学3个方面介绍水产品保鲜技术,并对复合保鲜剂的使用进行了展望。
The technology in the process of storage, transportation and sales of aquatic products play very important role.Preservation is not only to maintain its freshness, but also save its nutritional value. The safety and efficient preservation technology has very important significance. This article mainly introduces from the aspects of physical,biological and chemical three preservation technology,the use of the compound fresh-keeping agent is discussed.
