摘要
介绍了低聚果糖作为新型功能性食品基料的优异性能.并旦对其安全性进行了评价;较详细地介绍了低聚果糖的酶法生产及其在食品中的应用情况。在此基础上对低聚果糖的应用前景进行了一些展望。
The excellent performance of fructooligosaccharides was introduced in this paper. The security of using fructooligosaccharides was evaluated. And the application of fructooligosaccharides was introduced in detail. The enzymic production method was also imtroduced the application prospect was reviewed.
