摘要 介绍蔗果低聚糖的性质、功能、生产和研究进展.侧重介绍了国外对β-呋喃果糖苷酶和果糖苷转移酶的研究及采用葡萄糖氧化酶构成混合酶系生产高纯度蔗果低聚糖的研究状况. The propertise, function, production and research advance in recent years of fructo oligosaccharides are introduced, emphasizing on introducting the investigation of both β fructofuranosidase and fructosyltransferase, and the research state of the producting high content fructo oligosaccharides from sucrose by the mixed enzyme system of fructosyltransferase and glucose oxidase in several foreigncountries.
