摘要
对不同鲜度的猪肉、牛肉、羊肉、鸡肉和鱼肉进行活菌总数、革兰氏阴性菌数、大肠菌群数及挥发性盐基氮 (TVB_N)测定 ,并与LAL试验 (鲎变形细胞溶解物试验 )进行平行对比研究 ,证实肉品的鲜度与其细菌总数、革兰氏阴性菌数及LAL指数呈负相关性。应用LAL试验可在短时间 (1~ 2小时 )内快速判定肉品的细菌污染程度及鲜度 ,比传统的细菌培养计数法大大缩短了时间 。
Three different freshness samples of pork,beef,mutton,chicken and fish were examined for the numbers of total viable cells,gram_negative organisms,colifrom groups and the value of TVB_N.The results were compared with those of LAL test (limulus amoebocyte lysate test).A positive correlation was observed among the total viable cells,gram_negative organisms and LAL indexes. It indicated that LAL test index can be used to determine the bacterial contamination and freshness of the meat rapidly.
