摘要
探讨了以海藻酸钠为原料研制生产果冻Sherbet所需果冻的工艺及配方,确定了果冻Sherbet及复合乳化稳定剂的配方。试制成外观诱人、口感独特的低脂富钙保健型冷冻饮品。
The formula and process of jelly designed specially for Jelly Sherbet,which is made from Sodium Alginate etc,were discussed and researched. Both the formula of main material and that of complex emulsifying stabilizers for Jelly Sherbet were determined,and a kind of attractive and delicious frozen drink with health protection function,low in fat but rich in calcium was produced
