摘要
为了促进我国面粉工业的健康发展 ,综述并分析了美国、日本、欧共体和我国在小麦面粉中使用添加剂的现状 ,指出了我国目前在面粉添加剂使用中存在的四个问题 ,分析了形成这一局面的主要原因 ,进而提出了如下解决措施和方法 :加快立法步伐 ,加大执法力度 ;扩大宣传 ,正确引导 ;加强有关添加剂的生产、使用、分析检测等新技术、新方法的研究 ;加强对面粉生产企业的管理 ,发展专用小麦。
According to the application of additives in the flour in America, Japan,EEC and China, this paper pointed out four problems of food additives application in the flour and analyzed the main reasons causing this phenomenon. In order to promote the development of flour industry, several suggestions were put up in this paper. That is, building the law and instruction of additives application; the research should be focused on the new technologies and methods of the production, application and analysis of the additives; management of flour enterprise should be improved; the problem of developing special wheat and special flour should be solved soon.
