摘要
该文探讨了HACCP系统在固态法制醋生产中的应用 ,即进行了危害分析 ,找出了影响质量的关键控制点 ,并提出了解决的方法途径 ,将危害控制在发生之前 ,保证了食品安全 。
Application of HACCP in solid state fermented vinegar production was studied in the paper.The critical control points were found out and some corresponding solutions were put forward to control the critical points before it took place,so the quahty of vinegar can be guaranteed and improved.
