摘要
螺旋藻是一种天然的营养保健食品,含有丰富的营养成分和多种生物活性成分。本文综述了螺旋藻的营养价值,以及在免疫调节、抗肿瘤、抗疲劳等方面的保健功能。同时,对其在食品添加剂以及功能性食品的开发应用进展进行介绍。
Spirulina, as natural nutrition health food, contains plenty of nutrients, and a variety of biological active ingredients. In this paper, the nutrition value and the health care functions in the fields of immunomodulation, anti-tumor, antifatigue etc. of spirulina was summarized. It also presented the research progress of spirulina in food addi-tives as well as functional food.
