不同绿豆品种籽粒淀粉含量变化研究 被引量:5

The Research of Mung Bean Starch Content Variation in Different Regions

摘要 实验采用3,5—二硝基水杨酸(DNS)比色法和参考国标法—稻米直链淀粉含量的测定方法,对种植在河北石家庄、陕西岐山、江苏南京3个地区10个绿豆品种的籽粒总淀粉、直链淀粉、支链淀粉的含量变化进行了研究。研究结果表明,保9815-36的总淀含量、直链淀粉含量和支链淀粉含量均最低,分别为53.1%、20.13%、32.62%,冀绿9802的总淀粉含量、直链淀粉含量最高,分别为61.17%和23.19%,而支链淀粉含量最高的是2001-569,达39.57%。另外,不同地区、不同绿豆品种的籽粒总淀粉、直链淀粉、支链淀粉含量也存在较大差异,总淀粉含量、直链淀粉含量、支链淀粉含量由高到低均依次为江苏南京>陕西岐山>河北石家庄。在实际生产中,应根据不同淀粉类型需要、不同地域种植选择合适品种,以期获得最好的经济效益。 The content of total starch,amyliose and amylopectin of ten different varieties of Mungbeans,which are Ji-Green 9802,Ji-Black-Green9832,Panul 942-34,Paul 9808-16,Paul 9815-36,Zheng03-94,2002-4-16,2001-569,An05-4 and An 04-9,were determined by the 3,5-dinitrosalcylic acid(DNS) colorimetry and reference GB,which is the rice amylose content determination method.The results showed that there are obvious difference of the content of total starch,amyliose and amylipectin among various types in different areas,simultaneously,the region of the highest content of total starch,amyliose and amylopectin is Nanjing in Jiangsu,followed is Qishan in Shannxi and the lowest is Shijiazhuang in Hebei.We can draw the conclusions that we should plant the suitable varieties according to the need of different various starches in order to get the best economic benefit.
