摘要
产酯酵母是一类能够赋予产品酯香味的微生物。对产酯酵母的应用现状进行了全面的综述,并且对这些领域的历史和发展前景进行了简要的分析。
Easter-producing yeast is a kind of microbe, which could endow products with ester aroma. In this paper, the application status of es- ter-producing yeast was introduced, and its history and its development foreground were simply analyzed.
