摘要
研究旨在利用胡萝卜种植过程中产生的大量残次胡萝卜经过果胶酶、纤维素酶的双酶解,进一步发酵、蒸馏最终生成酒精。研究主要对影响双酶解的条件进行优化,通过单因素、正交实验得到最佳的酶解条件,为最终的酒精发酵打下基础。以期探索残次胡萝卜酒精工业化生产的可行性。
A high-yield ethyl acetate yeast YLH15 was isolated from the Daqu of strong-flavor Gujing liquo by screening and ethyl acetate analysis. According to the morphological properties, biolog automated microbial identification system and molecular biology identification of YLH15, the strain was identified as Wickerhamomyces anomalus, the highest ethyl acetate was observed as 3796 mg/L. The results showed that strain may have potential applications in the fermentation industry.
