简述了微波加热技术发展概况及发展前景,从应用角度阐明了微波原理及其特点,提出并探讨了微波加热技术在淀粉食品的膨化干燥、水果蔬菜的微波真空脱水处理、肉制品的加工与干燥、微波解冻和微波灭菌等方面的应用情况。
