摘要
为评估新疆额尔齐斯河野生丁鱥的肌肉营养价值,采用GC-MS法、HPLC和AAS分别检测该种鱼肌肉。检测发现,丁鱥肌肉中含有14种脂肪酸、18种氨基酸和8种微量元素,其中不饱和脂肪酸占总脂肪酸的54.89%,多不饱和脂肪酸中DHA、EPA分别占总脂肪酸的9.73%、6.11%。人体必需氨基酸含量占总氨基酸的53.52%。此外,还含有对人体有益的大量微量元素。野生丁鱥营养成分类别多样,是一种具有巨大开发价值的鱼种。
In order to evaluate nutrition value of wild Tinca tinca L. , which mainly survives in the Ereqsi river of Xinjiang,using GC-MS,HPLC and AAS to analyse muscle of Tinca tinca L. 14 fatty acids,18 amino acids and 8 trace elements were conformed. Unsaturated fatty acid contents were 54,89%, polyunsaturated fatty acid DHA, EPA were 9.73% ,6.11 %, respectively. Essential amino acid contents were 53.52% and mass of salutary element were found. All above mentioned demonstrated that Tinca tinca L contains various nutrition and was worthy of exploiting.
