大瓶螺肌肉营养成分分析 被引量:3

摘要 采用常规肌肉营养测试方法测定分析大瓶螺的肌肉营养成分。结果表明:大瓶螺肌肉(鲜样)中粗蛋白15.04%(质量分数,下同),粗脂肪0.61%,维生素C0.07%,碳水化合物1.18%,灰分2.05%,水分80.50%。肌肉中含17种常见氨基酸,总量为65.63%(干样),其中7种人体必需氨基酸(不包括色氨酸)总量是23.93%,占氨基酸总量的36.46%;其必需氨基酸的构成比例基本符合FAO/WHO的标准;赖氨酸含量丰富,占氨基酸总量的8.20%。比较得出:大瓶螺是一种高蛋白、低脂肪的优质水生动物。 Nutritional components in the muscle of Ampullaria gigas Spix were tested and analyzed with routine methods. The results showed that contents of crude protein, crude fat,Ve,earbohydrates,ash and moisture of fresh muscle were 15.04%, 0.61%,0.07%,1.18%,2.05% and 80.50% respectively. The composition of amino acids of muscle was 17 common amino acids and 7 essential acids for human needs( no analysis was made for tryptophane).In dry sample the total content of amino acids was 65.63%. the content of essential amino acids was 23.93%, the percentage of essential amino acids in total amino acids was 36.46%. the ratio of amino acids to no-essential amino acids (EAA/NEAA)was 63.54%.It was apparent that the content of the different amino aeids was stable and the constitutional rate of the essential amino acids accorded with the FAO/WHO Standard fundamentally. The amounl of lysine was considerably high, reaching about 8.20%.In conclusion, Ampullaria gigas Spix is a good hydroeole animal with high protein and low fat.
