摘要
大豆乳清是工业上生产大豆分离蛋白的副产物,其中含有乳清蛋白、低聚糖、异黄酮等营养成分。大豆异黄酮由于具有抗癌、抗氧化、预防骨质疏松等生理功能而倍受人们关注。试验对用乙酸乙酯从大豆乳清中萃取大豆异黄酮进行了研究。结果表明,经过3次萃取后,大豆乳清中的异黄酮有87.2%转移到乙酸乙酯相中。采用乙酸乙酯萃取的方法从大豆乳清中分离异黄酮是可行的。
Soybean whey, a discarded byproduct in the production of soybean protein isolate, contains whey protein, oligosaccharides, isoflavones and so on. Soybean isoflavones are highly attractive because they have some important physiological properties, such as antitumor activity, anti'oxygenic activity, preventing osteoporosis and so on. In this article, the extraction of soybean isoflavones from soybean whey by ethyl acetate was studied. The results showed that after extraction of three times, 87.2% of isoflavones was transferred from soybean whey to ethyl acetate. Therefore, extraction by ethyl acetate is a feasible method to separate soybean isoflavones from soybean whey.
