蜂王幼虫酶解工艺的研究 被引量:2

摘要 为研究蜂王幼虫酶水解工艺条件,选用木瓜蛋白酶进行正交试验,考察水解温度、时间、加酶量、pH值和固液比5个因素对酶水解的影响,并确定出最优水解条件为温度50℃,时间3h,加酶量0.5%,pH为6.5,料水比为1∶3。此工艺可为鸡蜂王幼虫水解蛋白液或蛋白粉的开发提供一定的理论依据。 To study enzymatic hydrolysis conditions in honeybee, papain was adopted to do orthogonal experiment, and the effects of temperature, time, enzyme amount, pH value and solid-liquid ratio on hydrolysis were analyzed. Through the analysis of experimental data, the optimal conditions of papain were determined, i.e. temperature was 50 ℃, time was 3 h, pH was 6.5,enzyme amount was 0.5 %, solid-liquid ratio was 1 : 3. It could provide basic for development of honeybee in hydrolysis liquid and powder.
