摘要
对酶制剂在食品加工保鲜行业中的应用进行了概述,尤其对在食品加工、食品保鲜和食品检测方面的应用作了较详细的叙述,并对酶制剂在食品行业中的应用前景,如酶基因工程、固定化酶技术的应用以及酶法合成功能性食品等方面进行了论述。
The major application of enzyme in food industry,particularly in food processing, food preservation and food detection was summarized. The prospect of the application of enzyme in food industry including was also introduced in this paper, the enzyme genetic engineering, immobilized enzyme and enzyme synthesis of functional ingredients.
