摘要 对菊苣(Cichorium intybus L.)系列产品的开发研究进行了述评。介绍了菊苣的特征特性及菊苣块根经现代生物技术深加工后,可得菊粉、低聚果糖及高果糖浆。以菊苣为原料生产的菊粉系列产品,以其特殊的生理功能正在被现代人作为理想的糖源所接受。菊苣作为一种宝贵的植物资源,开发利用前景广阔。 This paper reviewed the development and the biological and ecological characteristics of the chicory (Cichorium intybus L. ),which is rich in inulin. After processing inulin,oligosaccharides and ultrahigh fructose glucose syrups (UHFGS) were achieved by modern biological technology. Inulin or oligosaccharities and ultrahigh fructose glucose syrups (UHFGS) are being accepted by people because of their peculiar physiology function. The development of chicory must have a bright prospect.
