摘要
锌是人体内最重要的微量元素之一。我国的膳食构成中易引起锌缺乏症。本试验利用乳酸锌作为锌强化剂对豆米粉,Vc固体饮料,豆奶进行了强化试验,试验结果表明:强化锌工艺简单,产品质地、风味不受显著影响。
Zinc is one of the most important trace elements in human body, The dietary ingredient in our country caused the deficiency of zinc easily. The soyabean-rice powder, Vc solid drink and soyabean milk are fortified with zinc lactate as zinc fortification agent in this experiment. The experiment result indicates, zinc fortification technology is not difficult. There is no obvious effect on food charactor and flavour through zinc fortification. Zinc fortification is possible with zinc lactate in food.
