摘要
介绍了香兰素的合成方法及其在食品、医药等方面的应用。结合国内外的最新研究进展 ,综述了香兰素的化学合成方法和生物合成方法。通过对合成香兰素各种方法的安全性、技术可行性的比较分析 ,认为发酵法是最具有发展前景的方法。
The synthetic methods and usage of vanillin in the food and medical fields were reviewed. According to the latest development of researches in home and overseas, the synthetic methods of vanillin were introduced, including the chemical and the biotechnological producing methods. It was concluded that the fermentable methods were the most perspective ways so as to the security and technological feasibility.
